Spinach is one of the most rewarding leafy crops for pots: it grows fast, takes little space and you can keep picking leaves for weeks. It also prefers cool weather, so it's ideal for spring and fall when other crops rest.

Pot and soil

Its roots are shallow: a planter just 6-8 inches deep is enough. Use soil rich in compost with good drainage. Long planters and crates work great.

Sowing

  1. Sow the seeds directly, half to one inch deep.
  2. Keep moist until they germinate (1-2 weeks).
  3. Thin them leaving one every 3-4 inches (or sow densely for "baby leaf").

Light and temperature

It wants soft sun or part shade (3-5 hours). It's a cool-season crop: in heat it bolts (goes to flower) and turns bitter. In summer, give it shade or grow other greens.

Watering

Steady moisture: spinach is mostly water. If it dries out, it turns bitter and bolts sooner. Water often, especially on warm days.

The trick: harvest leaf by leaf

Don't pull the plant: cut the outer leaves, leaving the central heart. New ones regrow and a single plant gives you several harvests over weeks.

Common problems

  • Bolting: heat or long days; harvest early and give shade.
  • Yellow leaves: overwatering or lack of nutrients.
  • Aphids: check undersides; wash off with water or insecticidal soap.
